Welcome back to the Laudium Sun’s Bhabi’s Corner, and the beginning of a super year ahead! This is our first column for 2022 and we present some recipes for our dear readers who have indicated that they wanted a few recipes to counter the indulgences of the past holiday season.
We wish you all a wonderful 2022 and hope that you enjoy this selection of light recipes which we are delighted to present to you.

Crouton Salad

5 slices of brown bread
2 tomatoes
2 English cucumbers (cubed)
2 bell peppers (cubed)
Lettuce leaves (roughly chopped)
Lemon juice (to taste)
1 1⁄2 tblsp olive oil
Sesame seeds
Dash of paprika and black pepper

Method:

1.Cut bread into +- 1.5cm blocks
2.Sprinkle olive oil on baking sheet, toss with cut bread and
dry in oven (100 degrees) till crisp for +- 1 hour
3.In salad bowl, place lettuce leaves at the bottom
4.Toss tomatoes, cucumbers & peppers over lettuce
5.Make light dressing with olive oil, sesame seeds and
lemon juice and drizzle over salad
6.Just before serving toss in croutons & sprinkle a bit of salt, pepper and paprika

Shrimp Cocktail

500 gr peeled shrimp, steamed
in a bit of water / salt for +-15 minutes
2 tblsp butter, 2 cloves garlic (crushed)
5 tblsp Trim, 2 tblsp yogurt
1 tblsp Tabasco sauce
Salt / white pepper to taste
Dash lemon juice
Fresh parsley & lemon rind for garnishing
Lettuce head for serving

Method:

1.Melt butter, add garlic and simmer for a few seconds
2.Add Trim, yogurt, Tabasco, lemon juice, salt & pepper & allow to cool
3.Fold in shrimp & serve on a bed of lettuce
4.Garnish with parsley & lemon rind

Light Chicken Fillets

4 chicken fillets (butterflied)
2 spoons low fat mayonnaise
1⁄4 tsp fine red chillies
1 tsp ground garlic
Finely chopped coriander

Method:

1.Marinate chicken for +- 2 hours
2.Grill on hot stove, on a pan and serve immediately

Baked Potato Wedges

3 medium potatoes
(leave skin on, cut into wedges)
Course salt for rubbing
5 ml olive oil,
3 cloves crushed garlic
1 tsp lemon pepper
Chives for garnishing
2 tblsp sour cream

Method:

1.Rub potato wedges with salt, garlic, paprika and lemon pepper.
2.Drizzle with olive oil – place on baking sheet and bake at 180 degrees C
till potatoes are soft and golden
3.Remove from oven & drizzle with sour cream
4.Garnish with chives and serve

Iced Mint Tea

18 large fresh mint leaves
1⁄2 litre warm water, 3⁄4 cup sugar
2 tblsp lemon juice
Mint ice cubes (to serve)

Method:

1.Blend together all
ingredients for 2 minutes
2.Chill for 1-2 hours
3.Drain off excess mint leaves
4.Serve with mint ice cubes
(place mint leaves in ice tray, add water and freeze)

Household tips & hints

  1. Add 1⁄2 a Disprin to the flower vase. The flowers will remain fresher for longer
  2. To unclog a plugged drain, try using a cup of salt mixed with a cup of baking soda – no
    liquid. Pour the dry solution into the drain, followed by a pot of boiling water
  3. Remove crayon marks from walls with baking soda.
  4. Adding a cinnamon stick to your vacuum cleaner can help to add a nice scent to the living
    room the next time you go through it.
  5. Heating a chopped lemon in a cup of water in your microwave on high until the window is
    nice and steamy. Let the bowl sit inside for 15 minutes, then open and wipe down the grease
    and grime.
